CORAVIN SELECTION
We are very proud to now offer some of our premium bottle selections by the glass! Try a 4oz pour of one of our specially selected vintages using our recently installed Coravin system. The Coravin is a unique device that allows the user to extract the wine using a new revolutionary technology. This system employs a hollow needle to puncture through the cork of the wine and inject Argon gas in place of CO2 as the wine is released. When the needle is removed the cork will naturally reseal itself allowing the remaining wine to continue to evolve without being exposed to oxygen.
2 or 4 OZ POUR OF OUR SPECIALLY SELECTED WINES BY THE GLASS
Joseph Drouhin, 2015, Puligny Montrachet, Burgundy, France 9/18
Sleek and complex, this Chardonnay embodies all the characteristics, that you’d come to expect from years of experience in the cultivation of vines and traditional vinification.100% organically farmed since 2009, using both a balance of tradition and modern techniques that characterize Joseph Drouhin’s winemaking and high level of vineyard management. On the nose, refined aromas of hawthorn, fresh almond and apricot, evolve towards candied pear, hazelnut and grilled dried fruit. On the palate, a beautiful structure harmonizes nicely with fresh and velvety sensations.
Darioush, Cabernet Franc, 2015, Napa Valley – Mount Veeder 10/20
The unique terroir of the rocky, higher elevation Mount Veeder estate combines a cool, marine-influenced climate with exceptional sun exposure to naturally develop Cabernet Franc’s inherently earthbound, spice and black fruit flavors. Aromas of ripe black fruit; nutmeg, and leather, blend seamlessly with subtle smoky eucalyptus accents, Notes of cinnamon and black plum carry on through the mid-palate followed by hints of dark chocolate and spice.
Hertelendy, Cabernet Sauvignon, 2013, Napa Valley – Howell Mountain 12/24
Made by vintner Phillip Carallo-Titus, better known for prestigious Chappellet Vineyards located in Napa’s renowned Pritchard Hill Appellation. A long history of old world wine making dating back to the 18th century, Hertelendy has been reborn here in the new world using a combination of both ancient and modern wine making methods. The initial approach is full of intense big fruit aromas and savory notes of roasted meats, rosemary and black currants. Sweet new leather and roasted espresso are revealed as the wine opens. Caramel and vanilla combine with firm tannins and juicy black fruit for structured well balanced finish.
Fog Catcher, Bordeaux Blend, 2015, Paso Robles 14/28
Just east over the Santa Lucia Mountains only a few miles inland from the chilly Pacific Ocean lies Niner Wine Estates. The vineyards here experience more ocean fog, wind and precipitation compared to the rest of the Paso sub-appellations. Along with the year round California sun, this environment creates ideal growing conditions for Bordeaux varietals. Lovely garnet color, with aromas of black currant, orange zest and raspberry, gives way to notes of black licorice, chocolate, and subtle hints of new French Oak. Strong mid-palate, with well balanced acidity and dusty tannins.
Silverado Vineyards, Cabernet Sauvignon, Solo, 2013, Napa Valley – Stags Leap District 16/32
Located deep in the heart of Napa Valley, Stags Leap District is renowned for producing some of the highest quality Cabernets in the world. Silverado Vineyards was one of the early pioneers in this part of Napa Valley, and was one of the first four vineyards planted to Cabernet in the early 1960’s, which helped establish the reputation of Stags Leap District itself. This wine opens up with layered aromas of crushed dark cherries, bittersweet chocolate and violet. The elegant dark-fruit flavors are supported by firm, supple tannins. Nuances of toffee, burnt sugar and toasted oak add even more complexity, while the smooth lingering finish keeps on pleasing the palate.
Giovanni Corino, Barolo, Riserva, 2010, Piedmont, Italy 16/32
Carefully grown, produced and sorted using organic methods and traditional wine making techniques handed down over generations. Corino Borolo is full of sweet spice and floral aromas that give way to flavors of ripe cherry, fresh picked mushrooms and black figs. There is an earthy and smoky mid-palate that reflects the rocky terrior where the grapes are grown. Big dry finish and a distinctive minerality give you just what you are looking for in a classic style Barolo.
